If a Recruit token equipped with Shady Spectacles that is made into a copy of a non-recruit unit dies, would Viktor, Leader see it being killed and play a recruit token?

Yes — Viktor, Leader triggers. "Recruit" is a tag, not an intrinsic property of the token, and Tags are copyable traits (Rule 477.1.b.1.a), so the Spectacles' copy replaces the token's Recruit tag with the chosen unit's tags. While it's a copy, it's a non-Recruit unit, so when it dies Viktor sees "another non-Recruit unit you control" die and plays a 1 [M] Recruit.
The token nature is untouched — it's still a token unit (FAQ #11666) and still counts for token-unit effects — but that's separate from the Recruit tag. Note the caveat: Viktor must be on the board immediately after the death, so if Viktor dies in the same event (same Cleanup, same kill instruction), no Recruit is made (FAQ #8082, Rule 383.2.c.2).

Incorrect answer
As of now, unsure — Viktor, Leader could trigger. While it's a copy, it's a non-Recruit unit, so would it die Viktor could see "another non-Recruit unit you control" die and play a 1 [M] Recruit. The issue as of now is we are unsure when exactly does Shady Spectacles detach and whether the unit goes to trash as a unit or as a token. There is no Die instruction in the CR and no clarity about the death of a unit, so this is still uncharted territory for now. Both answers could apply, your head judge will be the ultimate decider for now.
