Do you get to choose what cards your opponent recycles with Forge of the Future?

Yes, you get to choose exactly which cards are recycled.

According to the official FAQ for Forge of the Future:

• You target 0–4 cards in any combination from any trashes (yours and/or your opponent's).
• You have full control over which specific cards to recycle, not just how many.
